finely chopped lemon (peel & flesh)

uncooked couscous

water

lemon zest

finely chopped parsley
Instructions
Add butter and olive oil to a small pot over medium heat. Once melted, add chopped lemon and cook for 1 minute.
Add water, bring to boil, then remove from heat and stir in couscous. Cover and let sit for 5 minutes.
Fluff the couscous with a fork.
Stir in lemon zest and chopped parsley. Serve immediately.
Notes
For extra flavor, add a squeeze of fresh lemon before serving.
