Lemon Herb Couscous

Ingredients
  

Dairy & Oils

  • 1 tablespoon butter
  • 1 tablespoon olive oil

Fruits & Vegetables

  • 3 tablespoons finely chopped lemon (peel & flesh)
  • 1 cup uncooked couscous
  • 1 cup water
  • 1 tablespoon lemon zest

Herbs

  • 1/4 cup finely chopped parsley

Instructions
 

  • Add butter and olive oil to a small pot over medium heat. Once melted, add chopped lemon and cook for 1 minute.
  • Add water, bring to boil, then remove from heat and stir in couscous. Cover and let sit for 5 minutes.
  • Fluff the couscous with a fork.
  • Stir in lemon zest and chopped parsley. Serve immediately.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
