Meat

  • 1 pound 90 10 lean ground beef
  • 12 ounces pasta (spaghetti, penne, or linguine)
  • 3 tablespoons extra virgin olive oil
  • 8 cloves garlic, minced
  • 2 medium medium lemons (zest) about 2 tablespoons
  • 2 medium medium lemons (juice) about 4-5 tablespoons
  • 1 teaspoon red pepper flakes
  • to taste Salt and black pepper
  • 0.5 cup freshly grated Parmesan cheese
  • for garnish Fresh parsley (optional)

Instructions
 

  • Cook pasta in salted boiling water until 1 minute before tender, then drain and set aside.
  • Heat olive oil in a skillet over medium-high heat, add garlic and red pepper flakes, and cook for 30 seconds until fragrant.
  • Add ground beef, brown for 5-7 minutes, then stir in lemon zest and juice, cooking for another minute.
  • Combine pasta with beef mixture, adding reserved pasta water until glossy sauce forms, then remove from heat.
  • Sprinkle with Parmesan, toss, and season with salt and pepper before serving. Garnish with parsley if desired.

Notes

For a richer flavor, let the beef rest for a few minutes before serving.
