Ingredients

  • 4 pieces boneless, skinless chicken breasts about 6 oz each, pounded to even thickness
  • Salt and freshly ground black pepper Salt and black pepper to taste
  • 2 tablespoons olive oil divided
  • 6 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup fresh lemon juice from 2-3 lemons
  • 1 teaspoon lemon zest
  • 1 tablespoon honey or sugar-free keto sweetener
  • 1/4 cup unsalted butter cut into pieces
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Pat chicken dry and season with salt and pepper.
  • Heat 1 tbsp olive oil in skillet, cook chicken 6-7 min per side until golden and internal temp reaches 165°F. Transfer to plate.
  • Add remaining oil and garlic to skillet, cook 1 min until fragrant.
  • Pour in broth, lemon juice, lemon zest, and honey. Simmer 3-4 min until slightly reduced.
  • Remove from heat, whisk in butter and parsley. Return chicken, spoon sauce, rest 2 min.

Notes

For extra flavor, marinate chicken in lemon juice and garlic beforehand.
