Lemon Garlic Cauliflower Rice

  • 1 large head cauliflower, grated or processed into rice-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon juice of lemon
  • 1 tablespoon lemon zest
  • to taste Salt and pepper Salt and pepper
  • optional Fresh parsley chopped parsley for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Sauté minced garlic for 1 minute until fragrant.
  • Add cauliflower rice and cook for 5-7 minutes, stirring occasionally.
  • Stir in lemon juice and zest, season with salt and pepper.
  • Cook for 2 more minutes, garnish with parsley if desired, and serve warm.

Notes

For extra flavor, add a pinch of red pepper flakes.
