Ingredients
  

Dry Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons lemon juice *
  • 1 teaspoon lemon zest *
  • 1/2 teaspoon vanilla extract
  • 5-8 drops yellow food coloring ((optional))
  • 1/4 cup sugar
  • 3/4 cup powdered sugar ((aka icing sugar or confectioners sugar))

Instructions
 

  • Mix flour, salt, and baking soda in a bowl; set aside.
  • Beat butter and sugar until fluffy; add egg, lemon juice, zest, vanilla, and food coloring.
  • Incorporate dry ingredients, cover, and refrigerate for 2 hours.
  • Preheat oven to 350F and line baking sheets.
  • Roll dough into balls, coat in sugar and powdered sugar, and place on sheets.
  • Bake for 10-12 minutes, cool on sheets for 5 minutes, then transfer to a rack.

Notes

For best results, chill the dough to prevent spreading.
