Instructions
Mix flour, salt, and baking soda in a bowl; set aside.
Beat butter and sugar until fluffy; add egg, lemon juice, zest, vanilla, and food coloring.
Incorporate dry ingredients, cover, and refrigerate for 2 hours.
Preheat oven to 350F and line baking sheets.
Roll dough into balls, coat in sugar and powdered sugar, and place on sheets.
Bake for 10-12 minutes, cool on sheets for 5 minutes, then transfer to a rack.
Notes
For best results, chill the dough to prevent spreading.
