Instructions
Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 6-8 minutes per side.
Add minced garlic to the skillet and cook for 1 minute until fragrant.
Pour in chicken broth and lemon juice, bring to a simmer. Stir in lemon zest and butter.
If desired, mix cornstarch with water to make a slurry and add to the sauce to thicken. Cook for 2 minutes until sauce thickens.
Garnish with chopped parsley and lemon slices. Serve hot.
Notes
For extra flavor, marinate chicken in lemon juice and herbs beforehand.
