Ingredients
  

Protein

  • 4 pieces boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup chicken broth low sodium
  • cup fresh lemon juice 2 lemons
  • 1 tbsp lemon zest
  • 2 tbsp butter
  • 1 tbsp cornstarch
  • 1 tbsp water for slurry, optional for thickening
  • 2 tbsp fresh parsley chopped

Optional

  • as needed lemon slices for garnish

Instructions
 

  • Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 6-8 minutes per side.
  • Add minced garlic to the skillet and cook for 1 minute until fragrant.
  • Pour in chicken broth and lemon juice, bring to a simmer. Stir in lemon zest and butter.
  • If desired, mix cornstarch with water to make a slurry and add to the sauce to thicken. Cook for 2 minutes until sauce thickens.
  • Garnish with chopped parsley and lemon slices. Serve hot.

Notes

For extra flavor, marinate chicken in lemon juice and herbs beforehand.
