Ingredients
  

Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 0.25 cup all-purpose flour
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 3 Tbsp olive oil
  • 3 Tbsp unsalted butter
  • 4 cloves garlic, finely minced
  • 0.5 cup low-sodium chicken broth
  • 3 Tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest (about 1 lemon)
  • 1 Tbsp chopped fresh parsley (optional)

Instructions
 

  • Trim excess fat from chicken and slice breasts horizontally if needed. Dredge chicken in flour mixture, shaking off excess.
  • Heat 2 Tbsp olive oil in a skillet over medium heat. Cook chicken 4-5 minutes per side until golden. Transfer to plate.
  • Reduce heat, melt butter, and sauté garlic for 30 seconds. Add chicken broth, lemon juice, and lemon zest. Simmer 2-3 minutes.
  • Return chicken to skillet, spoon sauce over, and simmer 2-3 minutes. Garnish with parsley and lemon slices if desired.

Notes

Serve hot with rice, mashed potatoes, or steamed vegetables for a complete meal.
