Instructions
Simmer 2.5 tbsp maple syrup, lemon juice, and 1.75 cups blueberries until slightly softened and syrup forms, 5-8 minutes. Cool.
Whisk almond milk, yogurt, salt, and lemon zest until smooth. Fold in oats.
Divide oat mixture into 4 jars; top each with 1 tbsp blueberry syrup. Repeat layering twice. Refrigerate 12 hours.
Before serving, top with remaining blueberries and lemon zest.
Notes
Use fresh blueberries for best flavor and texture.
