Ingredients
  

olive oil or butter

  • 2 tablespoons olive oil or butter

onion, finely chopped

  • 1 small onion, finely chopped

garlic, minced

  • 2 cloves garlic, minced

mushrooms, sliced

  • 8 oz mushrooms, sliced

cooked turkey, shredded or chopped

  • 2 cups cooked turkey, shredded or chopped

dried thyme

  • 1/2 teaspoon dried thyme

salt

  • 1/2 teaspoon salt more to taste

black pepper

  • 1/4 teaspoon black pepper

chicken broth

  • 1/2 cup chicken broth

half-and-half or heavy cream

  • 1/2 cup cream

cornstarch (optional)

  • 1 teaspoon cornstarch for thickening

fresh parsley for garnish (optional)

Instructions
 

  • Heat oil or butter in a skillet; sauté onion until soft (~4 min).
  • Add garlic and mushrooms; cook until golden (~6-8 min).
  • Stir in turkey, thyme, salt, and pepper; simmer with broth.
  • Pour in cream; optionally mix cornstarch with water and add to thicken; cook 5-7 min.
  • Serve warm, garnished with parsley if desired.
