Instructions
Let lamb chops sit at room temperature for 20 minutes.
Preheat oven to 400 F.
Drizzle olive oil on chops and season with salt, pepper, garlic, and thyme.
Heat 1 tbsp olive oil in a skillet, cook chops for 2-3 minutes per side until brown.
Transfer to oven, cook for 10-22 minutes based on desired doneness.
Let chops rest in the pan for 5 minutes, then serve.
