Instructions
Heat sesame oil in a large skillet over medium-high heat. Add ground beef and cook until browned.
Add diced onion, garlic, and ginger; cook until fragrant.
Stir in soy sauce, gochujang, honey, and lime juice; cook for 2 minutes.
Add cooked rice, vegetables, and sliced avocado; stir to combine and heat through.
Top with fried eggs, sesame seeds, scallions, and optional kimchi before serving.
Notes
For extra flavor, add a splash of sesame oil at the end.
