Ingredients
  

oil

  • 2 tbsp sesame oil

meat

  • 1.5 lbs ground beef
  • 1/2 medium red onion (finely diced)

sauces

  • 1/4 cup soy sauce ((or tamari/coconut aminos))
  • 1 tbsp gochujang
  • 2 tsp gochujang
  • 2 tsp lime juice

aromatics

  • 4 cloves garlic
  • 1 2-inch piece piece ginger

sweeteners

  • 2 tbsp honey ((or 4 medjool dates for Whole30))

vegetables

  • 2 cups shredded red cabbage
  • 1 carrot carrot (cut into matchstick sized pieces)
  • 2 cups cooked cauliflower rice, brown rice or white rice
  • 1 avocado avocado (thinly sliced)
  • 2 fried eggs fried eggs

seeds and scallions

  • 2 tbsp white sesame seeds
  • 1/4 cup chopped scallions
  • 1/2 tbsp sesame oil
  • 2 tsp lime juice

optional

  • 1/2 cup kimchi ((optional))

Instructions
 

  • Heat sesame oil in a large skillet over medium-high heat. Add ground beef and cook until browned.
  • Add diced onion, garlic, and ginger; cook until fragrant.
  • Stir in soy sauce, gochujang, honey, and lime juice; cook for 2 minutes.
  • Add cooked rice, vegetables, and sliced avocado; stir to combine and heat through.
  • Top with fried eggs, sesame seeds, scallions, and optional kimchi before serving.

Notes

For extra flavor, add a splash of sesame oil at the end.
