Ingredients
  

Meatball Ingredients

  • 1 lb ground beef (or pork, or a combination)
  • 1 large egg
  • 1/4 cup almond flour or crushed pork rinds
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup low-carb marinara sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp italian seasoning
  • fresh basil for garnish (optional)
  • salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix ground beef, egg, almond flour, garlic, Italian seasoning, salt, and pepper. Form into meatballs.
  • Sear meatballs in olive oil for 2-3 minutes on each side until browned.
  • Transfer meatballs to a baking dish, pour marinara sauce over, and sprinkle with mozzarella and parmesan.
  • Bake for 20-25 minutes until cheese is melted and meatballs are cooked through.
  • Garnish with fresh basil and serve hot.

Notes

Pair with a light green salad or steamed vegetables for a complete meal.
