Instructions
Mix warm water, yeast, and inulin; cover and set aside.
Whisk dry ingredients together in a bowl.
Cut butter into dry mix, then add cold water, cream, and yeast mixture; form a dough ball and chill.
Roll out dough, fold, and repeat for a total of 6 folds, chilling as needed.
Shape dough into croissants, brush with egg, and let rise for 1 hour.
Bake at 375°F for 20-25 minutes until golden brown.
