Ingredients
  

Dough Ingredients

  • 2 tbsp lukewarm water
  • 2 tsp active dry yeast
  • 2 tbsp inulin powder
  • 3/4 cup vital wheat gluten
  • 1/2 cup allulose sweetener
  • 1/3 cup oat fiber
  • 1/3 cup lupin flour
  • 1 tbsp coconut flour
  • 1 1/2 tbsp baking powder
  • 1/2 tsp xanthan gum
  • pinch salt
  • 1 cup cold salted butter, cubed
  • 6 tbsp cold water
  • 7 tbsp heavy cream
  • 1 whole egg for brushing

Instructions
 

  • Mix warm water, yeast, and inulin; cover and set aside.
  • Whisk dry ingredients together in a bowl.
  • Cut butter into dry mix, then add cold water, cream, and yeast mixture; form a dough ball and chill.
  • Roll out dough, fold, and repeat for a total of 6 folds, chilling as needed.
  • Shape dough into croissants, brush with egg, and let rise for 1 hour.
  • Bake at 375°F for 20-25 minutes until golden brown.

For best results, ensure all ingredients are cold before starting.
