  • 2 tablespoons olive oil split

diced yellow onion

  • 1/2 cup yellow onion diced

poblano pepper

  • 1 piece poblano pepper diced

minced venison

  • 1 pound minced venison

black pepper

  • 1/4 teaspoon black pepper

salt

  • 1/2 teaspoon salt

lime zest and juice

  • 1 piece lime zest and juice

sour cream

  • 1/4 cup sour cream

taco seasoning mix

  • 1 package taco seasoning mix

ground cumin

  • 1.5 tablespoons ground cumin

tomato paste

  • 2 tablespoons tomato paste

finely chopped garlic

  • 1 tablespoon garlic finely chopped

water

  • 1/2 cup water

flour tortillas

  • 4 pieces flour tortillas

shredded Mexican blend cheese

  • 2 cups shredded Mexican blend cheese

Pico de gallo, guacamole, cilantro, and additional toppings

Instructions
 

  • Sauté onions, poblano, and garlic in olive oil until softened.
  • Add ground venison, seasonings, tomato paste, and water; cook until meat is browned and mixture thickens.
  • Spread filling on half of each tortilla, top with cheese, fold, and cook on a skillet until golden and cheese melts.
  • Serve warm with pico de gallo, guacamole, and cilantro.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime before serving.
