Ingredients
  

Protein

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • to taste Salt
  • to taste Pepper

Grains

  • 1 cup Quinoa
  • 2 cups Water or chicken broth

Toppings & Sides

  • 1 large Avocado Ripe
  • 1 cup Plain Greek yogurt
  • 2 tablespoons Lime juice
  • 1/4 cup Cilantro, chopped
  • 1 cup Cherry tomatoes, halved
  • 1 cup Corn kernels (fresh, canned, or frozen)
  • 1 can Black beans, rinsed and drained
  • 1/2 medium Red onion, diced

Instructions
 

  • Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Grill until cooked through.
  • Cook quinoa in water or broth until fluffy, about 15 minutes.
  • Slice grilled chicken and assemble bowls with quinoa, avocado, yogurt sauce, tomatoes, corn, black beans, and red onion.
