Bell Peppers

  • 4 large Bell Peppers (any color: red, yellow, or green)

Cooked Chicken

  • 2 cups Cooked Chicken (shredded or diced)

Cooked Rice

  • 1 cup Cooked Rice (white, brown, or cauliflower rice)

Black Beans

  • 1 can (15 oz) Black Beans (drained and rinsed)

Corn

  • 1 cup Corn (fresh, frozen, or canned)

Diced Tomatoes

  • 1 can (15 oz) Diced Tomatoes (with green chilies)

Cheddar Cheese

  • 1 cup Cheddar Cheese (shredded)

Spices and Seasonings

  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

Salt and Pepper

  • to taste Salt and Pepper

Fresh Cilantro

  • optional Fresh Cilantro for garnish

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the peppers and remove seeds.
  • Mix cooked chicken, rice, beans, corn, tomatoes, cheese, and spices in a bowl.
  • Stuff the peppers with the mixture and place in a baking dish.
  • Bake for 30 minutes until peppers are tender and cheese is melted.

Notes

For extra flavor, top with fresh cilantro before serving.
