  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil (For seasoning chicken)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Vegetables

  • 2 cups Cherry tomatoes (Diced)
  • 1/4 cup Fresh basil (Chopped)
  • 2 cloves Garlic (Minced)

Toppings & Extras

  • 1 tablespoon Olive oil (For topping)
  • 1 tablespoon Balsamic vinegar
  • 1/2 cup Shredded mozzarella or Parmesan cheese (Optional)

Instructions
 

  • Season chicken breasts with olive oil, garlic powder, oregano, basil, salt, and pepper.
  • Cook chicken in a skillet over medium heat until cooked through, about 6-8 minutes per side.
  • In a bowl, combine diced cherry tomatoes, chopped basil, and minced garlic.
  • Top cooked chicken with tomato mixture, drizzle with balsamic vinegar, and sprinkle cheese if desired.
  • Finish with a drizzle of olive oil and serve hot.

Notes

For extra flavor, marinate the chicken with herbs beforehand.
