Ingredients
  

Protein

  • 1 lb large shrimp, peeled and deveined

Dairy & Oils

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter

Vegetables & Aromatics

  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped

Dairy

  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese

Vegetables & Seasonings

  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • ½ tsp salt or to taste
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Instructions
 

  • Pat shrimp dry and season with salt and pepper.
  • Heat olive oil and butter; sear shrimp 1-2 minutes per side until pink. Remove and set aside.
  • Sauté garlic in the same skillet; add sun-dried tomatoes and cook 1 minute.
  • Pour in heavy cream, simmer until slightly thickened; stir in Parmesan cheese.
  • Add spinach and Italian seasoning; cook until wilted. Return shrimp and simmer briefly.

Notes

Adjust seasoning to taste before serving.
