Instructions
Pat shrimp dry and season with salt and pepper.
Heat olive oil and butter; sear shrimp 1-2 minutes per side until pink. Remove and set aside.
Sauté garlic in the same skillet; add sun-dried tomatoes and cook 1 minute.
Pour in heavy cream, simmer until slightly thickened; stir in Parmesan cheese.
Add spinach and Italian seasoning; cook until wilted. Return shrimp and simmer briefly.
Notes
Adjust seasoning to taste before serving.
