Ingredients
  

Dairy

  • 15 ounces ricotta cheese
  • 11 ounces cream cheese, softened
  • 2 cups heavy whipping cream

Sweeteners & Flavorings

  • 3/4 cup sugar
  • 2 teaspoons vanilla extract, divided

Fruits

  • 16 ounces unsweetened crushed pineapple, drained
  • 15-3/4 ounces lemon pie filling

Cookies & Biscuits

  • 3 ounces ladyfingers, split

Instructions
 

  • Beat ricotta, cream cheese, sugar, and 1 teaspoon vanilla until fluffy. Fold in whipped cream.
  • Mix pineapple, pie filling, and remaining vanilla. Layer ladyfingers in a bowl, then add layers of ricotta mixture and pineapple mixture, repeating once.
  • Finish with remaining ricotta and pineapple layers. Cover and refrigerate several hours.
