Ingredients
  

Seafood

  • 1 pound haddock fillets (about 4 pieces)

Breadcrumbs

  • 1/2 cup panko breadcrumbs

Seasonings

  • 2 cloves garlic (minced)
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup butter (melted)
  • 1/4 cup olive oil
  • 1 tablespoon butter (for greasing the baking dish)
  • 5 ounces baby spinach (washed and patted dry, optional but delicious)

Instructions
 

  • Preheat the oven to 400F. Grease a baking pan with butter, place spinach, and top with haddock fillets brushed with olive oil.
  • Combine panko, garlic, parsley, paprika, onion powder, salt, and pepper. Stir in melted butter and press onto haddock.
  • Bake for about 20 minutes, or until the haddock flakes easily with a fork.

Notes

For extra flavor, consider adding lemon zest to the breadcrumb mixture.
