Instructions
Roast cauliflower florets with 1 tablespoon olive oil until golden, about 20 minutes.
Sauté chopped onion and minced garlic in 1 tablespoon olive oil until translucent, about 5 minutes.
Add roasted cauliflower to the sautéed onion and garlic, then pour in vegetable broth. Simmer for 10 minutes.
Puree the mixture until smooth, then stir in heavy cream. Season with salt, pepper, and herbs if using.
Serve hot, garnished with fresh herbs if desired.
Notes
For a vegan version, substitute heavy cream with coconut milk or cashew cream.
