Ingredients
  

Vegetables

  • 1 head Cauliflower (florets, roasted)
  • 1 medium Onion (sautéed)
  • 2 cloves Garlic (minced)
  • 4 cups Vegetable broth
  • 1 cup Heavy cream (added at the end)
  • 2 tablespoons Olive oil (for roasting and sautéing)
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Black pepper (to taste)
  • 1 teaspoon Fresh thyme or rosemary (optional)

Instructions
 

  • Roast cauliflower florets with 1 tablespoon olive oil until golden, about 20 minutes.
  • Sauté chopped onion and minced garlic in 1 tablespoon olive oil until translucent, about 5 minutes.
  • Add roasted cauliflower to the sautéed onion and garlic, then pour in vegetable broth. Simmer for 10 minutes.
  • Puree the mixture until smooth, then stir in heavy cream. Season with salt, pepper, and herbs if using.
  • Serve hot, garnished with fresh herbs if desired.

Notes

For a vegan version, substitute heavy cream with coconut milk or cashew cream.
