Ingredients
  

Protein

  • 1 lb skinless, boneless chicken thighs
  • 1 tsp dried rosemary
  • 1 tsp black pepper
  • 1 tsp ground coriander
  • 1 tbsp olive oil (for sautéing)

Vegetables

  • 1 small cucumber (diced)
  • 4 pcs roasted jalapeños (or other hot peppers)

Dairy

  • 1.5 cups Greek yogurt
  • 3 cloves garlic (minced)

Garnish & Serving

Instructions
 

  • Cut chicken into bite-sized pieces and season with rosemary, pepper, coriander, and minced garlic.
  • Heat olive oil in a skillet and cook chicken for 6-8 minutes until golden and cooked through.
  • Mix diced cucumber with desired veggies for a salad.
  • Whisk Greek yogurt with minced garlic, salt, and diced cucumber to make tzatziki; chill for 20 minutes.
  • Assemble bowls with cucumber salad, sautéed chicken, olives, and a dollop of tzatziki. Serve with lemon slices.

Notes
