Instant Pot Ground Turkey Quinoa Bowls (Buffalo Ranch)

Ingredients
  

Meat and grains

  • 1/2 Tbsp olive oil (7g)
  • 1 lb 93% lean ground turkey
  • 1 oz ranch seasoning mix 1 packet
  • 3 cloves garlic frozen cubes
  • 1/2 tsp salt
  • 1.5 cups water
  • 1 cup uncooked quinoa (180g)
  • 1 small onion (160g), finely diced
  • 2 medium carrots (160g), finely diced
  • 1/2 cup feta cheese (56g)

Optional toppings

  • buffalo sauce for drizzling
  • light ranch dressing for serving
  • avocado slices for topping

Instructions
 

  • Set Instant Pot to "Saute". Cook ground turkey until no longer pink, about 5 minutes.
  • Add ranch seasoning, garlic, salt, and water. Stir to deglaze.
  • Cancel "Saute". Add quinoa and diced vegetables; do not stir. Close lid, set valve to "Sealing", and pressure cook on High for 12 minutes.
  • Quick release pressure. Serve bowls topped with feta and optional buffalo sauce, ranch, and avocado.

Notes

For extra flavor, add a drizzle of buffalo sauce and fresh avocado slices.
