Instructions
Preheat oven to 350 degrees and grease 1 large loaf pan or 4-5 mini loaf pans.
Shred apples using a grater and mix with sugar in a bowl. Let sit for 5 minutes.
Add oil, eggs, and vanilla extract to the apple mixture.
Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
Stir dry mixture into wet mixture until just incorporated. Pour batter into prepared pans.
Bake for 30 minutes for mini loaves or 55 minutes for a large loaf. Cool before slicing.
Notes
For best flavor, use a variety of apples like Granny Smith and Gala.
