Ingredients
  

Apples

  • 4 apples apples peeled and cored
  • 1 cup sugar
  • 0.5 cup vegetable oil
  • 2 eggs eggs
  • 2 tsp vanilla extract
  • 3 cups flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp salt
  • 1 tbsp ground cinnamon
  • 0.5 tsp ground nutmeg

Instructions
 

  • Preheat oven to 350 degrees and grease 1 large loaf pan or 4-5 mini loaf pans.
  • Shred apples using a grater and mix with sugar in a bowl. Let sit for 5 minutes.
  • Add oil, eggs, and vanilla extract to the apple mixture.
  • Combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
  • Stir dry mixture into wet mixture until just incorporated. Pour batter into prepared pans.
  • Bake for 30 minutes for mini loaves or 55 minutes for a large loaf. Cool before slicing.

Notes

For best flavor, use a variety of apples like Granny Smith and Gala.
