  • 24 sticks lollipop sticks
  • 0.5 cup Idaho® potatoes, plain and mashed
  • 0.5 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon salt
  • 5 cups confectioners' sugar (625 grams)
  • 1-2 drops gel food coloring (optional)
  • 12 ounces chocolate candy melts
  • 1 teaspoon shortening

Instructions
 

  • Microwave potatoes until tender, then mash and cool. Mix mashed potatoes, butter, vanilla, and salt until smooth. Gradually add powdered sugar until dough is sticky. Chill for 1 hour.
  • Form small cake balls, refrigerate for 30 minutes. Melt chocolate and shortening in microwave, stirring until smooth.
  • Dip sticks in chocolate, insert into cake balls, and refrigerate for 10 minutes. Dip cake balls in chocolate, tap off excess, and decorate with sprinkles. Let dry before serving.

Notes

Reheat chocolate as needed for smooth dipping.
