Instructions
Whisk chicken rub ingredients together and rub evenly over chicken. Let sit for 30 minutes or refrigerate up to 8 hours.
Grease and heat a grill pan over medium-high heat. Cook chicken for 3-5 minutes until browned.
Turn chicken, cover, and reduce heat. Cook for 5-7 more minutes until cooked through. Let rest for 5 minutes before slicing.
Toss all salsa ingredients except avocados in a bowl. Chill for 30 minutes to 24 hours.
Gently fold in avocados before serving. Adjust seasoning as needed.
Notes
For extra flavor, garnish with fresh lime juice before serving.
