Ingredients
  

Chicken

  • 1 pound chicken fillets (pounded to an even thickness)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (about 1 lime)
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1-1/2 teaspoon chipotle chili powder (optional for more heat)
  • 1/4 teaspoon pepper

Avocado Salsa

  • 2 medium avocados (chopped) ripe but firm
  • 1 cup cherry tomatoes, quartered or 2 roma tomatoes seeded, chopped
  • 1 ear sweet corn (fresh)
  • 1/3 cup finely chopped red onion
  • 2 tablespoons finely chopped cilantro
  • 1 clove garlic (minced) or 1/4 tsp garlic powder
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper or more to taste

Instructions
 

  • Whisk chicken rub ingredients together and rub evenly over chicken. Let sit for 30 minutes or refrigerate up to 8 hours.
  • Grease and heat a grill pan over medium-high heat. Cook chicken for 3-5 minutes until browned.
  • Turn chicken, cover, and reduce heat. Cook for 5-7 more minutes until cooked through. Let rest for 5 minutes before slicing.
  • Toss all salsa ingredients except avocados in a bowl. Chill for 30 minutes to 24 hours.
  • Gently fold in avocados before serving. Adjust seasoning as needed.

Notes

For extra flavor, garnish with fresh lime juice before serving.
