Ingredients
  

Cake Batter

  • 1 1/4 cups all-purpose flour (150 g)
  • 2/3 cup granulated sugar (140 g)
  • 1 teaspoon baking powder (4 g)
  • 1/4 teaspoon baking soda (1 g)
  • 1/2 teaspoon fine sea salt (3 g)
  • 5 tablespoons unsalted butter (70 g), softened
  • 1 tablespoon plus 1 teaspoon neutral oil (20 g)
  • 1 large egg at room temperature
  • 1 large egg yolk at room temperature
  • 1/2 cup whole milk (120 g), at room temperature
  • 2 tablespoons full-fat sour cream (30 g), at room temperature
  • 2 teaspoons pure vanilla extract (10 ml)

Buttercream

  • 3 tablespoons unsalted butter (42 g), softened
  • 1/2 cup confectioners’ sugar (60 g)
  • 1 teaspoon whole milk or heavy cream (5 ml)
  • 1/2 teaspoon pure vanilla extract (2.5 ml)

Chocolate Coating

  • 18 ounces candy melts or confectionery coating (510 g), divided
  • Up to 1 tablespoon solid vegetable shortening (13 g), optional and only as needed
  • 1/4 cup jimmies or nonpareils (30 g)

Instructions
 

  • Prepare and bake the vanilla cake, then cool completely.
  • Crumble the cooled cake, mix with buttercream, and form into balls. Chill for 2 hours.
  • Melt candy melts, dip sticks, and insert into cake balls. Chill for 10 minutes.
  • Dip the cake pops into melted coating, add sprinkles, and let dry at room temperature for 30-60 minutes.

Notes

Ensure cake is completely cooled before crumbling to prevent excess moisture.
