Honey Mustard Shrimp and Potatoes

Ingredients
  

Sauce ingredients

  • 1/4 cup honey
  • 2 tbs Dijon mustard
  • 1/4 cup whole grain mustard
  • 1 tablespoon olive oil

Shrimp ingredients

  • 1 pound raw shrimp (no shells, deveined)
  • 5 cloves garlic (minced)
  • 1 tsp smoked paprika
  • Salt and pepper to taste Salt and pepper
  • 2 tbsp olive oil

Potatoes

  • 1 lb baby potatoes, halved I use The Little Potato Company’s Creamer Potatoes

Instructions
 

  • Par-cook halved potatoes in boiling salted water for 8-10 minutes until slightly tender. Drain and set aside.
  • Mix honey, Dijon, and whole grain mustard in a small bowl. Set aside.
  • Cook potatoes in 2 tbsp oil until crispy and golden, about 4-6 minutes. Remove and set aside.
  • In the same skillet, cook shrimp for 2 minutes, add garlic, cook 1 minute, then add half the sauce and toss.
  • Add potatoes back to the skillet, pour remaining sauce, heat through, and serve.

Notes

Adjust seasoning as needed and garnish with parsley or crushed peppers for extra flavor.
