  • 8 pieces lamb cutlets

Sauces and Condiments

  • 4 tablespoons unsalted butter
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon olive oil
  • 1 juice of lemon

Garnish

  • to taste salt and pepper
  • to taste fresh parsley, chopped (for garnish)

Instructions
 

  • Combine honey, garlic, rosemary, thyme, lemon juice, salt, and pepper in a bowl and whisk.
  • Marinate lamb cutlets in the mixture for at least 30 minutes in the refrigerator.
  • Heat olive oil in a skillet, then cook marinated lamb cutlets for 3-4 minutes on each side.
  • Baste with butter and remaining marinade, cooking until desired doneness.
  • Let cutlets rest, then drizzle with sauce and garnish with parsley.
  • Serve with your choice of sides.

Notes

For best flavor, marinate the lamb for several hours.
