Instructions
Combine honey, garlic, rosemary, thyme, lemon juice, salt, and pepper in a bowl and whisk.
Marinate lamb cutlets in the mixture for at least 30 minutes in the refrigerator.
Heat olive oil in a skillet, then cook marinated lamb cutlets for 3-4 minutes on each side.
Baste with butter and remaining marinade, cooking until desired doneness.
Let cutlets rest, then drizzle with sauce and garnish with parsley.
Serve with your choice of sides.
Notes
For best flavor, marinate the lamb for several hours.
