Heat a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear chicken for 3-4 minutes per side, then set aside.
Add rice to the pan and toast for 1-2 minutes. Stir in chicken broth, BBQ sauce, and honey. Return chicken to the pan and nestle into the rice mixture.
Bring mixture to a gentle boil, reduce heat to low, cover, and simmer for 15 minutes. Sprinkle mixed vegetables over the rice, cover again, and cook for 5 more minutes.
Remove from heat and let sit for 5 minutes before fluffing the rice with a fork. Garnish with chopped green onions or parsley and serve hot.
