Instructions
Mix warm water, egg, sugar, salt, and yeast; whisk for 1 min.
Add butter and most flour; knead until smooth, 5-6 min. Let rise 1-2 hrs until doubled.
Divide dough into 8 balls, shape into smooth rounds, and flatten to 3-3.5 inches. Let rise 1-1.5 hrs.
Preheat oven to 400°F. Brush buns with egg wash, sprinkle seeds, and bake 15-16 min until golden.
Cool on a rack before slicing. Store covered until use.
Notes
Ensure dough is slightly sticky but not clingy for best texture.
