Instructions
Preheat oven to 350°F (175°C) and line a deep-sided cookie tray with parchment paper.
Toast coconut, sunflower seeds, and sesame seeds in a skillet until golden; cool.
Cream butter (or coconut oil), peanut butter, vanilla, and brown sugar; add corn syrup/honey and dry ingredients; mix in toasted seeds.
Press mixture into prepared tray, then bake for 20 minutes until golden.
Cool slightly, score into bars, then cool completely before storing or freezing.
Notes
For a vegan version, use coconut oil instead of butter and ensure chocolate chips are dairy-free.
