Ingredients
  

Blueberries

  • 10 oz fresh blueberries

Flour

  • 1 cup plain flour

Protein Powder

  • 1/2 cup vanilla-flavored protein powder

Greek Yogurt

  • 3/4 cup thick greek yogurt

Olive Oil

  • 1/2 cup extra-virgin olive oil

Honey

  • 2 tbsp honey

Egg

  • 1 large large egg

Baking Powder

  • 1 tsp baking powder

Baking Soda

  • 1 tsp baking soda

Vanilla Extract

  • 1 tsp pure vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix flour, protein powder, baking powder, and baking soda.
  • In another bowl, whisk together Greek yogurt, olive oil, honey, egg, and vanilla extract.
  • Combine wet and dry ingredients, then gently fold in blueberries.
  • Divide batter evenly into muffin cups and bake for 20 minutes until golden.

Notes

For extra moisture, add a splash of milk if needed.
