Ingredients
  

Dry Ingredients

  • 1 cup plain flour
  • 1/2 cup vanilla-flavored protein powder
  • 1 tsp baking powder
  • 1 tsp baking soda

Wet Ingredients

  • 3/4 cup thick greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 10 oz fresh blueberries
  • 1 tsp pure vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  • In a bowl, mix the dry ingredients: flour, protein powder, baking powder, and baking soda.
  • In another bowl, combine the wet ingredients: yogurt, olive oil, honey, egg, and vanilla extract.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.
  • Fold in the blueberries gently.
  • Pour the batter into the muffin tin and bake for 20 minutes or until a toothpick comes out clean.

Store muffins in an airtight container for up to 3 days.
