Ingredients
  

Dry ingredients

  • 1.5 cups all-purpose flour
  • 1 cup vanilla protein powder (whey or casein blend recommended)
  • 0.75 cup granulated sugar (or sweetener of choice)
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt

Wet ingredients

  • 1 cup milk (whole, 2%, or unsweetened almond milk)
  • 2 large eggs room temperature preferred
  • 0.33 cup coconut oil (melted, or vegetable oil)
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup blueberries fresh or frozen (do not thaw if frozen)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions
 

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately.
  • Combine wet and dry, fold gently until just mixed. Fold in blueberries.
  • Divide batter into muffin cups, sprinkle with coarse sugar if desired.
  • Bake for 18-22 minutes until a toothpick comes out clean. Cool before serving.

Notes

For extra flavor, add a dash of cinnamon or nutmeg to the dry ingredients.
