vanilla protein powder
(whey or casein blend recommended)

(or sweetener of choice)

Wet ingredients

milk
(whole, 2%, or unsweetened almond milk)

room temperature preferred

coconut oil
(melted, or vegetable oil)

vanilla extract
Add-ins

blueberries
fresh or frozen (do not thaw if frozen)

coarse sugar
(optional, for topping)
Instructions
Preheat oven to 375°F (190°C). Line a 12-cup muffin tin.
Mix dry ingredients in a bowl. Whisk wet ingredients separately.
Combine wet and dry, fold gently until just mixed. Fold in blueberries.
Divide batter into muffin cups, sprinkle with coarse sugar if desired.
Bake for 18-22 minutes until a toothpick comes out clean. Cool before serving.
Notes
For extra flavor, add a dash of cinnamon or nutmeg to the dry ingredients.
