Ingredients
  

Cabbage Salad

  • 2 cups shredded red cabbage
  • 1 cup cooked chickpeas
  • 1 cup cooked edamame beans
  • 1 cup thinly sliced red onion

Dressing

  • 1.5 tsp pure honey
  • 0.5 cup extra virgin olive oil
  • 2 tbsps apple cider vinegar
  • 1 tsp ground sumac
  • 1 tsp Dijon mustard
  • 1 tsp sea salt
  • 1 tsp fresh black pepper

Instructions
 

  • Prepare edamame as per package instructions or boil until tender, then cool.
  • Add chickpeas, edamame, red onion, and cabbage to a large bowl.
  • Mix dressing ingredients in a jar and shake until combined.
  • Pour dressing over the salad and toss to coat.
  • Refrigerate for 30 minutes before serving.
