Ingredients
  

Meat

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup spinach, chopped
  • 1 cup cooked quinoa or brown rice
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 1 cup plain Greek yogurt
  • ½ cup low-sodium chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • to taste Salt and black pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook onion and garlic in olive oil until soft, then add turkey and season with spices. Cook until browned.
  • Add broccoli and spinach; cook briefly. Mix Greek yogurt with chicken broth.
  • Combine turkey mixture with cooked grains and yogurt mixture. Transfer to a baking dish and top with cheese.
  • Bake for 20–25 minutes until cheese is bubbly and golden. Let sit before serving.

Notes

Using Greek yogurt adds creaminess while keeping the dish light and high in protein.
