Ingredients
  

Pasta

  • 8 oz chickpea rotini pasta
  • 12 oz jarred roasted red peppers, drained

Sauce

  • 1 cup low-fat cottage cheese
  • 2 cloves garlic, minced
  • 1/2 cup yellow onion, finely diced
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup fresh basil leaves, sliced

Instructions
 

  • Cook pasta in salted boiling water until al dente; reserve 1/2 cup of water, then drain.
  • Blend roasted red peppers and cottage cheese until smooth.
  • Sauté onion in olive oil until translucent, then add garlic and paprika; cook 1 minute.
  • Pour blended mixture into skillet; heat gently, then add cooked pasta and Parmesan, tossing to coat.
  • Adjust sauce consistency with reserved pasta water; garnish with basil and serve.

Notes

For extra flavor, sprinkle additional Parmesan or fresh herbs before serving.
