Instructions
Boil chicken in water for 5 minutes, discard water.
Add water to cover chicken; add salt, mint, chickpeas, potatoes, and onion. Simmer 20 minutes.
Remove chicken, shred, and return to soup. Add vegetables and noodles if using.
Cook for 10-15 minutes, then serve hot.
