Ingredients
  

Herbs and Seasoning

  • 1/4 teaspoon minced fresh garlic
  • 1/4 teaspoon minced fresh thyme leaves
  • 1/4 teaspoon minced fresh rosemary leaves
  • 1 tablespoon minced fresh basil (about 3 large leaves)
  • 2 tablespoons freshly grated parmesan
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • kosher salt and freshly ground black pepper
  • toasted french bread or brioche for serving

Instructions
 

  • Preheat the broiler and place the oven rack 6 inches below the heat.
  • Combine garlic, thyme, rosemary, basil, and Parmesan; set aside.
  • Crack 2 eggs into each of 2 small bowls without breaking yolks.
  • Place ramekins on a baking sheet with cream and butter; broil for 3 minutes.
  • Pour eggs into dishes, sprinkle with herbs, salt, and pepper; broil for 5-6 minutes.
  • Let set for 60 seconds and serve hot with toasted bread.

Notes

For extra flavor, try adding different herbs or spices to the egg mixture.
