Ingredients
  

for the crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

for the peach filling:

  • 3–4 large peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

for the crumb topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted

Instructions
 

  • Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  • Combine flour, sugar, and salt; cut in butter until coarse crumbs form. Press into pan and bake for 15–18 minutes.
  • Toss peach slices with sugar, flour, lemon juice, and vanilla; let sit.
  • Mix flour, sugars, cinnamon, and salt; stir in melted butter until crumbs form.
  • Spread peach filling over crust and top with crumb mixture.
  • Bake for 45–50 minutes until golden; cool completely before slicing.
