Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1 teaspoon vanilla extract

Peach Filling

  • 3 cups fresh peaches, peeled and diced
  • 2 tablespoons cornstarch
  • ¼ cup brown sugar

Instructions
 

  • Preheat oven to 350°F (175°C) and line a 9x13-inch pan with parchment.
  • Whisk flour, sugar, baking powder, and salt. Cut in butter until crumbly.
  • Add eggs and vanilla, mix until combined. Press 2/3 of the mixture into the pan.
  • Toss peaches with cornstarch and brown sugar, spread over crust.
  • Crumble remaining dough over peaches. Bake for 35 minutes until golden.
  • Cool completely before cutting into squares. Serve and enjoy!

Notes

For best results, use ripe peaches for maximum flavor.
