Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
Stir in cumin, smoked paprika, and turmeric; cook for 1 minute to release flavors.
Add vegetable broth and chickpeas; bring to a boil, then reduce heat and simmer for 10 minutes.
Stir in spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and lemon juice.
Notes
For extra flavor, garnish with fresh herbs or a drizzle of olive oil before serving.
