Ingredients

  • 1 tablespoon olive oil

  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon turmeric

  • 4 cups vegetable broth
  • 1 can chickpeas drained and rinsed (15 oz / 425 g)

  • 4 cups fresh spinach about 120 g
  • to taste salt and pepper
  • 1 lemon juice of

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic; sauté until translucent.
  • Stir in cumin, smoked paprika, and turmeric; cook for 1 minute to release flavors.
  • Add vegetable broth and chickpeas; bring to a boil, then reduce heat and simmer for 10 minutes.
  • Stir in spinach and cook until wilted, about 2-3 minutes. Season with salt, pepper, and lemon juice.

Notes

For extra flavor, garnish with fresh herbs or a drizzle of olive oil before serving.
