chickpeas, drained and rinsed
Broth

vegetable broth (preferably low-sodium)

fresh spinach, roughly chopped

fresh lemon juice

Fresh parsley or cilantro leaves, vegan yogurt or grated Parmesan
Instructions
Heat olive oil in a large pot. Sauté onion, carrot, and celery until softened, about 8 minutes.
Add garlic, cumin, smoked paprika, and chili flakes; cook for 1 minute until fragrant.
Stir in chickpeas, then pour in vegetable broth. Bring to a boil, then simmer for 20 minutes.
Blend about one-third of the soup until smooth, then return to pot. Stir in spinach and cook 5 minutes.
Finish with lemon juice, season with salt and pepper, then serve garnished with herbs and optional toppings.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of fresh herbs before serving.
