Hearty Chickpea & Spinach Soup

Ingredients
  

Oil

  • 2 tablespoons extra-virgin olive oil

Vegetables

  • 1 medium yellow onion, finely diced
  • 1 large carrot, peeled and diced
  • 1 stalk celery, diced

Spices

  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon chili flakes (optional)

Canned Goods

  • 2 cans (15 oz each) chickpeas, drained and rinsed

Broth

  • 6 cups vegetable broth (preferably low-sodium)

Greens

  • 4 cups fresh spinach, roughly chopped
  • 1 tablespoon fresh lemon juice

Seasonings

  • to taste Salt and freshly ground black pepper

Garnish & Optional

  • as needed Fresh parsley or cilantro leaves, vegan yogurt or grated Parmesan

Instructions
 

  • Heat olive oil in a large pot. Sauté onion, carrot, and celery until softened, about 8 minutes.
  • Add garlic, cumin, smoked paprika, and chili flakes; cook for 1 minute until fragrant.
  • Stir in chickpeas, then pour in vegetable broth. Bring to a boil, then simmer for 20 minutes.
  • Blend about one-third of the soup until smooth, then return to pot. Stir in spinach and cook 5 minutes.
  • Finish with lemon juice, season with salt and pepper, then serve garnished with herbs and optional toppings.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of fresh herbs before serving.
