Healthy Vegan Banana Brownies

Ingredients
  

Dry ingredients

  • 1 cup oat flour Use gluten-free if needed
  • ½ cup natural cocoa powder Replace baking soda with baking powder if using Dutch-processed cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon Reduce or omit if desired
  • ½ teaspoon fine sea salt

Wet ingredients

  • 1 cup mashed overripe banana About 2 large bananas with dark spots
  • ¼ cup maple syrup
  • ¼ cup coconut sugar Can substitute date or brown sugar
  • 1 tablespoon brewed coffee Or non-dairy milk
  • 2 teaspoons vanilla extract
  • cup runny almond butter Or any nut/seed butter
  • ½ cup chopped raw walnuts

Instructions
 

  • Preheat oven to 350°F (177°C) and line an 8x8 pan with parchment paper.
  • Mix dry ingredients in a bowl. Mash bananas and stir in wet ingredients until smooth.
  • Combine wet and dry mixtures, then fold in walnuts.
  • Pour batter into pan and bake for 28-31 minutes. Cool before slicing.

Notes

Ensure bananas are very ripe for best flavor and sweetness.
