Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dry ingredients: oats, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Whisk wet ingredients: coconut oil, sugar, maple syrup, flax egg, and vanilla until combined.
Combine wet and dry mixtures; form a sticky dough. Scoop onto baking sheet and flatten with a fork.
Bake for 8-12 minutes. Cool on a rack before serving.
