Healthy Maple Pecan Oatmeal Cookies

Ingredients
  

Dry ingredients

  • 1 cups Bob’s Red Mill Organic Quick Cooking Rolled Oats
  • 0.75 cup Bob’s Red Mill Organic Whole Wheat Flour
  • 1.5 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 0.125 tsp salt
  • 1.5 tbsp unsalted butter or coconut oil, melted and cooled slightly
  • 1 large egg (room temperature)
  • 0.5 cup pure maple syrup (room temperature)
  • 4 tsp maple extract see Notes
  • 3 tbsp finely diced pecans see Notes

Instructions
 

  • Mix oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk melted butter and egg, then stir in maple syrup and extract. Combine with dry ingredients, fold in pecans, chill for 20 minutes.
  • Preheat oven to 325°F (160°C). Line baking sheet with parchment or silicone mat.
  • Drop 15 scoops of dough onto sheet, flatten to ⅜ inch, press remaining pecans on top. Bake for 9-11 minutes, then cool for 10 minutes.

Notes

Chilling the dough helps prevent spreading during baking.
