Ingredients
  

Dry ingredients

  • 2.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 cup sugar
  • 0.5 teaspoon salt

Wet ingredients

  • 2 large eggs, lightly beaten
  • 0.67 cups oil
  • 1 cup Greek yogurt
  • 0.25 cup milk

Add-ins

  • 1.5 cups blueberries
  • optional extra sugar for sprinkling optional

Instructions
 

  • Preheat oven to 375°F/190°C or 400°F/205°C.
  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients in a separate bowl, then combine with dry. Fold in blueberries.
  • Spoon batter into muffin cases, sprinkle with extra sugar if desired.
  • Bake for 17-20 minutes until golden and a skewer comes out clean. Cool and serve.

Notes

Use fresh or frozen blueberries for best results.
