Ingredients
  

Wet ingredients

  • 2 pieces eggs
  • 3/4 cup Greek yogurt
  • 1/2 cup almond milk
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil (melted and cooled to room temperature)
  • 3 tbsp molasses
  • 1 tsp vanilla extract

Dry ingredients

  • 2 cups white whole wheat flour
  • 1/2 cup dark brown sugar
  • 1 1/2 tsp ginger
  • 1 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  • Melt coconut oil and let it cool.
  • Whisk eggs, yogurt, syrup, molasses, vanilla, and cooled coconut oil in a large bowl.
  • Mix dry ingredients in a separate bowl, then combine with wet ingredients and mix.
  • Distribute batter into muffin tin, bake for 20 minutes, then cool on a rack.

Notes

Optional sprinkle of cane sugar before baking adds a sweet crunch.
