Main Ingredients

  • 24 oz salmon (cut into 4 portions)
  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 1 tsp olive oil
  • 2 cloves garlic
  • 2 cup spinach (fresh & chopped)
  • 1 cup tomatoes (cherry, sliced in half)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup parmesan cheese (fresh grated)
  • 1 tsp salt (pink himalayan)
  • 1/2 tsp black pepper (ground)
  • 1 serving pasta (barilla protein +)

Instructions
 

  • Pre-heat a nonstick pan on medium heat.
  • Cut salmon into 4 portions and sauté skin side down for 5 minutes.
  • Flip salmon, sauté for 2 more minutes, then remove and keep warm.
  • Add butter and garlic to the pan, then make a slurry with milk and cornstarch.
  • Whisk in milk and slurry, then add cheese, salt, pepper, spinach, and tomatoes.
  • Return salmon to the pan, heat for 1 minute, then serve.

Notes

For extra flavor, consider adding herbs like basil or oregano.
