Instructions
Pre-heat a nonstick pan on medium heat.
Cut salmon into 4 portions and sauté skin side down for 5 minutes.
Flip salmon, sauté for 2 more minutes, then remove and keep warm.
Add butter and garlic to the pan, then make a slurry with milk and cornstarch.
Whisk in milk and slurry, then add cheese, salt, pepper, spinach, and tomatoes.
Return salmon to the pan, heat for 1 minute, then serve.
Notes
For extra flavor, consider adding herbs like basil or oregano.
